We stayed at the Le Meridien Angkor:

Banteay Srei: Predates Angkor Wat. Cool if you want to see the progression of the temples as they got more complex

As you can see, the fish preferred my gross feet over my wife's
Khmer beef dinner at "The Touich" Restaurant. It's off the beaten path but very good and the owner is very nice and accommodating.
I'm a bit of a connoisseur of chicken wings, so I had these at the hotel pool:
Palm sugar/juice is a major food source. It's OK but you should try it. Kind of bitter/tart or whatever word that is.
Our guide said the Khmer Rouge used these to slice at folks. It is actually very sharp, from the palm trees.

Sorry I missed this, Angkor Wat as well as T Prohm, is a must and depending on the time of year the sunrise tour is a must, but you have those covered.
Banteay Srei "The Pink Temple" was good but a lot of walking for a small temple.
Bayon is an great place too, the heads in the stone are amazing.
Angkor Thom is really cool with the dueling gods leading up to the temple and it's really close to Angkor Wat.
