What to do?

Golf already booked.

Jeep desert tour booked.

What else should we try out?

Lots of great hiking in the area. Sedona, Flagstaff, the Grand Canyon, Bisbee, Tombstone and other cool touristy spots within a 2-4 hour drive. Can't beat Old Town Scottsdale for dining, drinking, shopping and people-watching. I strongly recommend checking out Cave Creek (just north of Scottsdale, 30 mins from Old Town), especially the Buffalo Chip. Live bull-riding on Wednesday & Friday nights, which people seem to love. Friday nights at the Chip is packed, they get 4-5,000 people there, but out-of-towners love the cowboy/country atmosphere.

I also vouch AZBadger. Been to Scottsdale often.
The Buffalo Chip is about a 30-40 minute drive from Old Towne but an extremely cool place. Big bar with a rodeo type open space in the back. You do have kids but the scenery on a weekend night cannot be beat anywhere in the US. Just an FYI.
Sedona, you could do a day trip. But head up there early in the day as traffic build in afternoon. Stop by Montezuma’s Castle on the way up. Sedona is really cool. The Cowboy Bar for lunch.
I have never done it but Talking Stick casino has a race car track that I heard is pretty good.
The Coach House is a great little Hole in the Wall. Ice could Shiner Bock

Architecture aficionados will love the tour of Frank Lloyd Wright’s retirement estate, Taliesin West.

The Coach House and the Rusty Spur are two of my favorite dive bars in Old Town.

I second this. It was also his school.

The Desert Botanical Garden in Phoenix is very cool.

Two years ago our Airbnb’ garage opened up to Coach Houses parking lot. Being from the east coast I would be up early on the rooftop deck.
That weekend there was NFL in London and people started parking at 6:30am. to watch that game. Not white trash people. Very nice cars.
If my wife (no pics) let me I would buy that Airbnb.
I hear Christmas there is fantastic

Stay at Valley Ho if you can. Iconic, very nice rooms, wonderful restaurant & pool.

The Sugar Bowl is an ice cream parlor with a 50's vibe, which isn't necessarily cool on its own but the hot fudge they make onsite is otherworldly. We can't be near there and not get some.
