Wife and I go every year before Christmas minus this one because our daughter was just born.
We usually stay at Roosevelt by grand central. Very nice and easy to get anywhere quick. I recommend a day of just exploring. Maybe find a few places/store you wanna see and just let the rest of the day be organic. We did the same one night with dinner, download Open Table...tons of places and will help you pick.
Not too far from Union square is a Saints bar called Bar None. Check it out if there's a game.
If you want to see a show buy from the TKTS booth in Times Square day of, heavy discounts but have to be in line when it opens.
NYC is amazing, my advice don't over plan.
