Going to Nashville December 3-6, any advice on what is open/not open?

Pretty much everything is open for now. There's an 11pm curfew still.

Ok, we're in a pandemic and cases are spiking here exponentially. So, you've got the whole COVID thing to deal with like any other area of the country right now. So mask up.
But, if you still plan to come, there are a lot of things you can do without getting undue exposure to significant crowds. Being indoors or not is a risk and that's up to you.
Get take out and hit a park. Amazing amount of outdoor stuff to do:
Hiking:
Radnor Lake
Warner Park
Beaman Park
History:
Visit Franklin (20 minutes south). See the Carter House or Carnton Plantation. Shop. Dine. Great vibe.
Go to Ft. Negley. Near downtown. Great preserved fort and museum.
Walk around Vanderbilt. Nice campus.
Entertainment:
City Winery
Country Music Hall Of Fame
Roof Top Bars are a thing here. Like the George Jones. LA Jackson.
