Yes we did meet Manny. Tony made sure to introduce us to him when we arrived. Everyone at the bellhop desk was so nice, Fernando brought our bags to our room and explained how everything worked and even called maintenance to check the thermostat.
Everything at the resort was first class, they did try to get us to go to a breakfast meeting for a sales pitch to buy a timeshare. We politely declined upon check-in and the night before we checked out they actually called our room to ask again. I understand they have a job to do, but it was the only slight annoyance with our stay.
And yes Tres Gallos is the real deal. Next time we want to book at El Farrallon, we could see when we took our whale watching tour, but it was booked solid while we were there.

Our fav spots in Cabo although there are a dozen others that are a close 4th. Adam Levine for married at Flora Farms so you know it's legit.

We stayed in San Jose del Cabo Hotel Gonzo and ate at Flora Farms. It was amazing. The only minor inconvenience about FF was the flies! They were everywhere.
Brunch was probably over $70 for two, but it was incredible.

Thanks for the awesome suggestions in this thread, I really appreciate them all. The wife and I spent the whole weekend looking at everything and are trying to map out the trip now. Sounds like this is going to be an awesome awesome trip.
