Not very knowledgeable on this topic, but I'm looking for something to help my wifi signal in a specific room in my house. We have AT&T Fiber internet, but when I'm on video calls in my office the signal drops a lot. I saw on Amazon a bunch of cheap options that you just plug into an outlet, but I'm not sure if that's crap or not.
Any suggestions?
ETA: I'm renting and can't make any structural changes or add access points in the walls.

Most solid solution is to run cable and install wifi access points where needed, but that can be a bit pricey.
Next best solution is to get a mesh wifi system with 2 or 3 units. The main unit will replace your current router. If your current router is a combo unit from AT&T built into the fiber modem, you will disable its wifi and put it in a passthrough mode so that your new mesh unit can handle routing. Sounds complicated but there are probably simple instructions to follow.

Should prob add that I'm renting and I can't make any changes to the house itself.

Adapter
Used them in my last house for my xbox and work computer that was pretty far from the router. Worked great for me.
If your wifi range is fine everywhere else in the house, I would just get this for your office and call it a day.
ETA: But I would listen to Korkstand - he knows a lot.

Those powerline adapters may work well, looks like the technology has improved a lot. Be aware though that how well they work will depend on the electrical wiring. They work best if on the same circuit.
Also be aware that this is not wifi. It will give you an ethernet outlet in the office that you can plug into, so if you need wifi you will need an access point as well.

IMO, the "best" compromise is to go MoCA.
Something like MoCA adapter on Amazon
I was in a similar situation to you. I had went out and bought an expensive mesh wifi setup and while it worked, it wasn't perfect.
The MoCA adapters work perfectly. No, it's not ideal. Ethernet drops would be ideal. However, it's as close as I could get without having to do new drops.
Most homes/apartments have multiple coax runs. If you have access to the terminations for the cables, you can make it work. Most cable companies have an outside box you can easily open to access the terminations. Just find the ones that connect your office and the room your fiber gateway is located.
The upshot is even if you run wifi throughout the home, you'll get a much more reliable backhaul lane with the MoCA adapter.
Highly recommended.
