Mac and PC at same time. Would I just need a USB-C to DP adapter for that?
Depends entirely on your available connections, but the monitor has:
2x HDMI in
1 DP in.
2 USB—> computer connectors
2 USB ports (can probably chain a hub if necessary here
It does support picture by picture (I’ll leave it to you to see if they have a software solution for sharing KB/mouse
I don’t know which Mac you have. There are USBC hubs with HDMI all over. There are some DP ones out there. Whatever it is, if you want to be able to use a wired keyboard/mouse and switch it between the two computers, you need a free USB-A connector (either on that adapter, a separate adapter, or on the laptop itself)
And then all that will hold true on the PC as well.
One of those HDMI ports only supports 120hz. I don’t think Apple supports any laptop more than 60Hz over their USB-C , so that’s not a huge deal (and would make me choose the cheaper of the HDMI/DP hubs, because you won’t be pushing the monitor to the fullest.

I have a late 2021 MacBook Pro with M1 Pro, so hopefully it’ll be able to keep up. I’ll see what comes in the box and what I’m able to work out with it. I use the Logitech MX Keys which has its own software for that if the monitor doesn’t.

You should just use HDMI- no need to buy an extra adapter. That model should have an HDMI port.
You will need a USB-c (male)>A (female) adapter though, to use the USB on the monitor. It’s not required if you’re using Logitech MX and sharing already.
Pretty sure that MacBook only supports 60hz. Have no fear- it won’t cause any problems.
And then give your windows box the DisplayPort or other HDMI connector.
