We have an old alarm system that's mostly taken out. The siren sits on the 2nd floor ceiling and when I eventually remove it, I'm considering mounting our router on it. Modem would stay in the attack right above. I would also want to run at least two ethernet cables down between the walls and replace some old phone line connections with an ethernet port cover two rooms where I'd use a hardwire connection: one for the Xbox/PC one room and the other just to have if I decide to add a desk to my bedroom.

Would doing this impact my overall performance? I'll pull up my old post from a few months back and can list the router/modem and internet speeds I'm working with. House is about 1700 sq ft and router would be dead center of the house.

My google points are on my ceilings hidden. Seems fine.

Don't mount your router to the ceiling. Get an access point and mount it there. The router won't allow you to hide the wires. Plus you don't want to climb up there if you want to add more connections to the router.

I tend to agree with the poster above, if you can help it.

If possible, run the main router to somewhere more accessible then run the access point up to the ceiling.

That’s what I did and it has worked out well for me.

I've been out of home network for awhile. Would an access point eliminate my router entirely?

My reasoning for this setup is because my internet comes from a coaxial cable that is fed through a vented spot in my attic crawl space, and the wire is then connected to one of wall plates in a second floor room where I plug my modem then router.

No, you will still need a router.

What most refer to as a "router", the ones sold at Walmart and such, is a router and a switch and a firewall and a WiFi access point and a ...

It's good to use a dedicated AP, takes a load off the router. You could still use the router's WiFi too, but I would recommend disabling it or better yet get a non WiFi router to match the AP.
