Macbook Pro storage question

I have a 1TB Macbook Pro and pay for iCloud. I have the option "Store in iCloud" selected, and yet my computer says that storage is almost full. I can see the breakdown of my storage, and most storage is being eaten up my docs, pics, videos, and messages, but I have all of those selected to only store on the cloud.

This is the description of "Store in iCloud"...based on this, the files should not be living on my computer, right? Halp. I know I'm probably missing something really obvious here and feel stupid.

Don't let cloud storage be your only storage solution.

New to Mac products. Why would you say that? Not super familiar with the system yet. I thought the iCloud was the best. How else should i back up phone and ipad photos?
