Now that Apple is discontinuing ITunes, where will I be able to purchase music from on an older IPod?

Pretty sure the "Music" app will still be able to do everything the old iTunes one did like syncing, etc

On a Mac syncing is done in finder on a pc you are still syncing with iTunes

You can always use CopyTrans Manager for managing stuff that you already have. It's a great free little program, it can do a lot.

Music app replaces it. Your music will be fine where it is.
