It's done so hacks aren't out there doing a shitty job. Then a dealer has to be called in to fix the shitty work and it costs more in the end.

I would probably try and find a well regarded independent AV guy and see what he thinks about the plan and what he'd charge you for a comparable set up if you purchased most of the equipment.
I just have trouble believing that TV mount quote isn't absolutely insane.

It depends on the mount. They can be expensive. None of us have inspected the site either so there's plenty of speculation in this thread.

So for $5700, you aren't pay for a Sonos system but rather an AV equipment and install.
There is some fluff in there certainly but it doesn't seem that unreasonable without know more specifics of the site.
Oh and Remote programming for $190 is a bit excessive but he is probably pricing in the dozens of calls over the next year that you and the family will make every time they can't turn something on.

I am not sure how into 2 channel audio and home theater you are, but if it were me, I would not drop that much on Sonos. You can get MUCH better equipment on that budget, put it in a nice rack or AV furniture and use a Harmony remote. I do think get the TV professionally hung on stone is a must.
If you are the type that just wants decent functioning surround sound and have a super clean install where everything is hidden, then do it. I still would not go the route of URC though for what you are going to ask for it to do. I would be a waste IMO. Contrary to what other posters have said, URC does need to be professionally programmed and it takes a long time. Again, for your install, I would stick with a Harmony remote and do it yourself on your laptop.
I have URC Total Control throughout our house and is mainly used for our home theater, living room, climate control, and security system. and my office. We have our master bedroom and patio on it too, but it's used pretty sparingly there. I love it, but the only reason to get something like that is if you have a very elaborate system and or love to tinker. It took our installer almost 8 hours just to program our home theater.
