iPhone 11 vs. 12 camera

Interested in hearing thoughts and perspectives on Iphone cameras - specifically between the 11 pro, which has a telephoto lens, and the 12 mini which has the "latest" apple camera technology but no telephoto lens. Which would you say is the better camera?
My wife has her own jewelry business and needs to be able to take good quality close-up photos of her pieces.

No advice on the phone, but from personal experience I'd recommended a legit camera for this use case. Granted my experience was a few years ago, but I was able to take exponentially better pictures with a $250 Nikon than with my phone. Also, most of my issues were with shooting in a light box for later editing and those did not coming out great. Phone cameras have built in filters to optimize things like selfies and landscapes and you don't always have as much control with those settings as you would in an actual camera.

I would agree with this. The best pictures I've ever taken have all come from my entry level DSLR camera. Better lenses and sensors lead to better pictures.
If the pictures she's taking are being done at home/office so the availability of the camera isn't an issue, I'd say get the 11 and spend the difference on a DSLR camera.

A DSLR is going to be a phone camera.
Having said that , phone camera have come a long way.
If you opt for the camera route I would suggest the iPhone 12 pro. The reason being is the telephoto lens AND the pro allows PRORAW photos
