Morning!
I spend a good bit of my day in excel, but never really need anything more than a few pivot tables and charts. I am looking to expand my knowledge. There are countless youtube videos on the subject, but wanted to see if anyone has any specific recs or online training classes. TIA

There’s been a lot of these in the past. Intermediate/advanced classes tend to be more focused on particular topics.
I don’t have any recommendations for specific YT channels, but instead to start with a specific project or outcome you want. If it’s data analysis with pivot tables/charts, functionality through VBA, or simplification of some work process.
Then spend the time researching the specific tasks/functions to get to that outcome. Build up to more advanced functions as you grow.

I use excel multiple hours a day usually. I would consider my abilities advanced, but there are some "advanced" capabilities of Excel I don't know how to use well because they don't fold into my daily/weekly/monthly tasks.

What are you trying to accomplish? Like others have said, theres a billion things you could learn, but the vast majority will likely not be pertinent to you.
My honest recommendation, if you are working with large data sets or need better visuals, learn other programs like Alteryx, Power BI, and/or Clik. They're all more powerful tools than excel if you are truly working on "advanced" knowledge.
