I recently spun up a Home Assistant machine on a PI3 that was laying around. I’ve been playing with it for a few days now and have figured out how to trigger things from my Apple Watch and phone which is great. I’ve got some basic automations done (dim lights at night, brighten in AM, etc).
I’ve also set up scripts that when triggered will hijack my Sonos and play the Geaux Tigers cheer, Chinese Bandits, or Neck (depending on which one I call) then return the Sonos to either Music or TV as it’s source. I’m working on cycling the Hue lights purple/gold at the same time.
Does anyone else have some ideas on useful automations / scripts?

Just depends on what you have installed. Do you have any presence detections setup? You can do a lot with that. I am using RoomAssistant which uses bluetooth to detect which room you are in.
I have found that setting up my computers for booting up/shutting down is convenient. I can use my light switch in my office to turn on or off basically anything.
Which brings me to the best part, which is using smart switches to control anything in the house. While it is not an automation per se, it is pretty freaking convenient.
ETA: Also, setting up a power monitoring plug on your washer/dryer can allow you to get messages when the current load is done.
I also have the option to turn off my dumb doorbell chime and get doorbell notifications on my phone and echo devices.
