I want to extract emails in a pdf portfolio by ascending date sent, not the subject line. How can I go about doing this using Adobe Acrobat Pro DC?

If you have a program like Outlook, just sort the emails by date, select the emails you want to print, and then print the emails choosing a PDF printer which creates a PDF file.
Win 10 or later should have a built in Microsoft to PDF printer. Earlier than that you might need to download and install one of the many free PDF printers, then select that as the printer and print to PDF.

The emails are already in a pdf portfolio. I want to extract all 200+ of them into individual documents by the date sent.

Are they already sorted in the PDf portfolio by date? If so, you can export them as individual files. If not, then I’m not aware of adobe being able to sort based on criteria like excel, outlook, etc.

The default file name for the individual emails when exported is by email subject. If you can change that, I have not figured out how.

There's an a thunderbird add on called attachment extractor that could pull and rename attachments based on search criteria and change the file name to include the date.
