DVD/BluRay collection to portable device help

I have a collection of dvds and Blu-ray Disc that I want to rip to a portable hard drive and watch via screens in my wife’s (no pics) vehicle (hdmi/usb). Can someone help point me in the right direction on what to do?

I use MakeMKV to rip the blu-rays and copy them to a 15TB external hard drive. Downloaded Plex Media Server to manage the files.
After storing them on the hard drive, U also have the option of plugging directly into my blu-rat player. (Oppo 203).
