Anyone here a pro with DNS resource records, especially on Google?

Here's my problem:
Current situation: I have a domain name registered with Google (which is a nightmare, and to make matters worse, they are selling it to Squarespace and are in the midst of a transition, so getting help is a mess). Call it xyzcompany.com. I use TigerHorn@xyzcompany.com as a professional email address that I cannot afford to disrupt.
What I need to do and need help on: I have bought a plan with Protonmail where I want to move all of my email to, while adding more email addresses for family members, etc to the xyzcompany.com domain. I have successfully verified that I own the domain with Protonmail, now I need to add custom resource records to the Google DNS. When I type in the custom record per Proton's instructions, Google gives me a warning dialog that I am going to "delete and replace on Google Workspace xyzcompany.com/MX, google_domainkey.xyzcompany.com/TXT, and 2 more" with the new MX resource. There is no option to simply add the new custom resource records that I can see. I guess that is not possible?
My questions:
1. Am I about to disable my TigerHorn@xyzcompany.com email, or is this strictly for all the Google Workspace features that I don't use?
2. Deleting the email inbox is actually OK IF when I set up the TigerHorn@xyzcompany.com address on Proton, everything that went to the old email will now come to the new email. Is that the case?
3. If this blows up in my face, I have downloaded a BIND file of my DNS records, will I be able to simply upload that back to Google and revert back to the present situation?

The MX record tells the world where to send your email. That warning is saying, email will no longer be directed to Google. You are directing it to Proton. Domainkey (and 2 more) are related to spam prevention. These are changing because you're moving to Proton.

2. Yes, all new email will go to the Proton mailbox.
3. Yes
It takes time for DNS changes to propagate. New mail might show up at Google for a few hours before being completely switched to Proton.
You're going to want to get a copy of your old email on the Google server before you disconnect service with them. Proton might have a tool for doing this.

If it makes you feel better the whole email system is like trying to balance an Egyptian pyramid on a couple of greasy chopsticks
