Two Noob Strategy / Rule Questions

As a forewarning, these come from a complete soccer novice so apologies in advance if they are absurd.

1. Why do goalies do the long kick? They can't be that overly accurate with it and even if they do pick a guy and hit him, the odds of him winning the header and getting possession can't be better than 70/30, right? Why not just kick it to one of the shorter guys and let them bring the ball up? That way ya guarantee possession?

2. What are the rules about impeding progress? Obviously it makes sense to me and is quite obvious that a defensive guy can't block an offensive guy. However, it seems that if they're both chasing for the ball that the defender is able to boxout the offensive guy and let the ball go out of bounds. Can the defender only impede the offensive guy if the offender doesn't have possession?

Some guys can kick it right to the player but really just to flip the field

Only if the defender is in playing distance of the ball. You can't "box out" 15 yards from the ball.

Makes sense on flipping the field, but it seems as if everyone goes deep before the kick so if ya just kicked it short and let one of your dudes dribble it up you'd flip it and ensure you kept possession.

Your defenders usually aren't your best passers, so it's generally better to kick it to the other side of the field than to try to build out of the back.

If you have a player go short, an opposing player will follow him and ensure he can't dribble it upfield. It's usually a strategy to play it short and work it out of the back with passing.

When you watch lesser skilled teams try to play out the back and continually turn it over in their own half, it makes much more sense.

I'm a noob too. But my guess is that when something goes wrong in the backfield, it'll probably cost you the game. Long kicking it is safer, even if you risk going up possession.

Think of the risk of playing out of the back if you turn the ball over....

Only highly skilled teams with confident defenders will play out of the back consistently because the results can be disastrous if the ball is turned over.

There are some teams like FC Barcelona that are known for playing out of the back but they are one of the top five teams in the world.
