Surgeons wear masks to block bacterial particles from a sterile surgical field.
Surgical masks block large bacterial particles, not sub 3 micrometer viral particles. And you are not going to catch a respiratory virus from an open surgical wound even if nobody in the OR was wearing any face covering.
