Yes, it's possible to manipulate digital EXIF and other file data to change the date and location of when/where a picture was taken. Anybody at Geek Squad can show you how.
However, it's also not hard to subpoena (or whatever they call it in a TX impeachment trial) the regular backups in iCloud, etc., that would show the attributes on the original file. If the prosecution believed the evidence was falsified, they should have prepared to support the claim. Looking for original versions of files is done all the time in IT audit situations. Should the prosecution have asked, there were probably 5,000 tech or Big4 employees within 10 miles of the trial that would have shown them how for $500.
Paxton should have just Facetimed his wife from court to show off the kitchen.
