Specklebelly in the Oven

Roasting 3 Specs we shot yesterday. What temp/duration is recommended this? Done this with plenty of ducks and know low/slow is best but never with geese. Using a large magnalite pot

I do 350 until tender, which I believe took around 2.5 hours last time I did it. My oven cooks a little quicker than my old one though.

I usually baste it every 30 minutes or so and check tenderness.

That is very similar to what I do, but I marinate the bird in the sherry and seasoning overnight.

Currently on hour 1 at 325. Gonna test it here in about 30 minutes to check tenderness. Took it out twice to baste/rotate in the gravy.
