When my dad was alive he made 10-20 gal per yr and would typically win awards for it at local fairs. Lots of work but incredibly tasty. I like a little darker syrup w more taste than the lighter versions. He had an evaporator pan over two gas burners and would drip sap in to keep his evaporation rate consistent. He had his own gas well so gas was not an issue. I know the baws like cane syrup but I found it too dark. He collected it in buckets so it was work but it was rewarding. I would give anything to do it again for a day w him.

Is gross. Applaud your effort though.

It's probably a function of what you grew up with. I have a BIL from the NE and he was all excited when he brought us back his favorite maple syrups from back home so he could show us what real syrup tasted like. One was store-bought and one came from a neighbor. Both just tasted like sugar water to me.

I don't each much syrup these days but if I was eating pancakes I'd honestly take Aunt Jemima over true maple. I prefer cane or sorghum to both.
