It's because it's basically impossible to get the heat right on a open fire. It's got to bloop every 2 or 3 seconds. Any more and it'll overflow the basket. Any less and you aren't making coffee.

Cowboy coffee is really the best way to do real campfire coffee if you need to be lightweight. If you don't care about weight or space, a drip pot is better than a percolator IMO. Percolator makes great coffee but it's such a pain in the arse. It's also so fricking hot that it takes forever to cool off to drink
