I am trying to retrieve my GPS Coordinates for my property stakes so I can mark it out on Google Earth and locate the GPS Coordinates for the center of the property. However, the GPS on the phone doesn't appear to be very accurate. Any suggestions?

GPS coordinates are expressed in two different units, which look surprisingly similar.
Make sure you're entering the units correctly based on your source.

There are two basic units for GPS Coordinates.
Decimal Degrees
and
Degrees Minutes Seconds
They are easily converted between if you have either or. Give them to me if you have them and I can help.
Do you already have the coordinates and trying to find the corners and center?
Or trying to figure out the coordinates of your corners.
Phone or handheld GPS won't give you the accuracy you are looking for to mark corners.

Google Earth is surprisingly accurate in depicting DMS coordinate values.
