Duck Roost Deer Processing

Just figured instead of resurrecting an older thread I'd leave some positive feedback here. Duck Roost in St. Amant apparently just started processing deer this year - just got back my fresh sausage, breakfast sausage, and straight grind today. Sausage tastes great and ground meat is vac sealed flat, good presentation, and good prices. I like their boudin alot so I figured I'd give them a shot since I don't usually kill one this early in the year. Just a thought for anybody wanting to try something new around greater BR area. Based on my conversation with the guy, sounds like they've invested in a big setup and are starting to see some traffic as deer seasongets going.

Great to know. I brought one to Porches in French Settlement last year and he was quick and reasonable, but the smoked sausage is so Smokey my wife won’t even let me cook it inside lol. It’s not awful, but it’s way too smoked to be used in a dish. Only good for biscuits and such

what was the deboning price and price of the ground? Also, what was the ground mixture? TIA

we just brought 12 hind/front quarters to Chris' Specialty Meats in Lakeview, they shipped to Baton Rouge plant to process that day.

$1.50/lb for Grind 70% Venison, 20% Beef, 10% Pork....I couldnt believe the price.

And they guaranteed it was my deer. Deboning is an extra $1.25/lb

Deboning price was $35 flat per deer. I got straight ground deer, not mixed, and I think it was $2.00 per lb for straight grind. My order came out to about $130 with fresh sausage, breakfast sausage, and straight ground deer. Not bad compared to others in the BR area.

That's an awesome price for Chris', though it sounds like they may make their money on the deboning.

I was gonna debone but the savings cancelled out and I was happy to not drive it to Franklinton
