What would be the best thing to find local that would do well and be beneficial to deer in an area that stays wet and shady most of the year and day. South Louisiana climate

you will have better luck by thinning some tree growth and allowing some sunlight to hit the ground. Let the natural briars and ragweeds grow

You could topseed some jointvetch but like hat said nothing a deer wants to eat grows well in the shade. Sunlight hitting the ground is the best thing you can do for a deer.

Joint Vetch is one of the only easy to grow forages that deer like to browse which grows OK in the shade and wet soils. So that's probably your best bet.

But note that as said above, nothing really grows well in shade and wet. So at the least try to create some sunlight. That will also help dry out the ground which will be a benefit as well.

If it gets weedy you can mow it and it responds really well. If grass is a problem you can spray Clethodim if you have access to a sprayer.

Plant it thick. It needs innoculation and or fertilizer especially its first year.
