I love deer roast of deer meat tacos. I also go some salami made this year and it was awesome. One slice of salami and a slice of tomato

Fried backstrap. Deer Chili.
I will take the shoulders and put them in a huge cast iron dutch oven, season them up good, put some liquid smoke, pineapple juice and water in the pot. Cover and cook unitl the meets falls off the bones. Kinda like pulled pork. add your favorite BBQ sauce and it is great for sandwiches.

I don't mix anything with my ground deer. My sausage is different. I mix a bunch if pork trimmings. Close to 70/30, pork deer. I have got the best deer sausage recipe, but I can't share it.

Venison steaks al soup!!! Awesome and easy.
Roast in a pot on the stove.

Put it in ice, no bag.

What you said below. I don't hunt deer but some friends use my place to clean theirs (I have a setup for cleaning game/fish) and that's what we do BUT even if someone brings me deer meat I do what I said above.
