So how sharp are you trying to get?

I have a chef's choice electric that for my kitchen knifes. It was whatever 3 stage that Americas test kitchen recommended and it is pretty good. Plenty sharp enough for chefs knifes.

Now for skinning knifes I basically want a razor, when I was still trapping heavily I was looking at skinning 3-20 animals a day and even the slightest dullness was a time waster. For my 2 dedicated skinning knifes, its a 2 stage diamond stone. I can get them scary sharp and touch them up in a few seconds. The learning curve was a little steep though.
