Joe Wheeler has some super nice cabins that are only a cpl years old. On Wheeler Lake on TN River. About 2.5 hours from Tuscaloosa. Range from 1-2 bedrooms on up. Deer you can almost pet.
Lots of other campsites up here on the TN River in the Shoals area as well if you're wanting something more primitive.
Joe Wheeler also has a golf course and lots of other amenities.
The bass fishing up here is also the best in the state along with Guntersville, between Pickwick, Wilson, and Wheeler Lakes and you can camp on any of the three and lock through to the other two. Pickwick is GREAT for smallmouth and Wheeler better for largemouth and crappie.

Anywhere in Eufaula would work really but I'm fond of the Lakepoint and White oak parks. But for Backpacking/camping there are plenty of rivers to enjoy as well. I have heard decent things about Chattahooche State Park lately as well.

Forkland, Al
If you like hunting and fishing, this is the place for you. It's just south of Tuscaloosa and significantly closer than anything else mentioned. There are several thousands of acres of land to hunt along the river and there's fishing as well.
The Forkland campground has hookups and hot showers. We stay there a lot during deer season.
