Those foot holds are incredibly uncomfortable. Look for one with sliding foot rests like the one in the picture above.
Had a Wilderness Systems Ride 135. I actually didn't like the length THAT long. They make a 115 and that was a good size. I bought mine used and ended up selling it for the same amount I bought it for. They don't particularly lose much value. Having said that, if you are wanting an entry level kayak to figure out if you like it, I wouldn't hesitate on buying a good deal off CL. Worst case scenario, if you don't like it, you can get most of your money back out of it, if not all of your money. Different story if you don't want to or can't stretch your budget. For the most part, you get what you pay for with Kayaks.
ETA, standing on a kayak isn't ever super comfortable. You need to have decent balance and stay centered on it regardless. But some kayaks are impossible to stand on.

So would OP be better in a sit in or a sit on top ?

I second the ascend FS-12T. I got one for my wife. She is a beginner and she feels very safe and comfortable in it. We have been in rough water with it and it handles well. It is very stable and tracks straight. Also very affordable for entry yak.

Sorry, just came back to this post.
When I bought my kayak, I wasn't a fan conceptually of the sit on top but quickly found that they were more comfortable than a sit in. There's no argument with a sit on top if you're fishing. You need some sort of maneuverability if you're fishing and a sit in just can't provide that maneuverability. Storage is also much better with a sit on top. Definitely don't recommend a sit in for a angler kayak.

Gotta say, the 3waters boats are pretty impressive for the money.
