Why can't we explore our mantle and core of our Earth? Why can't we develop technology to dig a hole deep enough to travel to China, you know since the world ain't flat and all

Why not both? Every aspect of science is usually being studied at all times, priority dictates funding though.
since you can already get to china by noon tomorrow for around $1000, I don't see your hole to china being built anytime soon.
Mars on the other hand takes billions of dollars and years (planning and timing) to get a rover there, much less a human. it might be a decent investment to look into a more permanent presence there.
