You have tons of time to start gaining credit card points to pay for majority of trip. You and wife could both sign up for chase Hyatt and get 4 free nights at any Hyatt property. Chase sapphire preferred would get you more points to transfer to Hyatt or airline. You could get southwest cards and get the companion certificate. Tons of options. Start looking at blogs like the points guy or flyer talk forums.

You could get your same 3k budget for under 1k, just paying for meals and entertainment

I have a buddy who used it on a trip to jamaica and had no issues

I used it on my honeymoon to Punta Cana and had no issues on flights, resort, or excursions

Would def recommend and I will use it anytime I travel to the area in the future

Up your budget some and go to Thailand. It was amazing.

Other suggestion is Costa Rica.

This.

NYC is a fun place for a long weekend getaway, since practically everything you'd want to do is within walking distance or a short subway ride away. Broadway show, myriad talk shows, museums, Yankee games -- you're not lacking for anything to do, and you've got more diverse food options than anywhere in the world in Manhattan.

I've never been there, but I've heard Boston is a fun city too, but it's more spread out.

ETA - like others have said, there are a litany of all-inclusives on the Mayan Riviera you can do for $3k, just depends on what type of getaway you're looking for.

Excellence offers 25% off if you book by this September and travel next year. It has to be a Jr. suite with garden view (no ocean view or swim up pool) but 7 nights with flight would only be $2250.
