So this chick can choose from just about every country in Europe, but chooses one of the few countrys that aren't members of the EU to try and live in?

It depends. Once you have it, its also hard for your descendants to lose. My kids have Swiss citizenship, based on the birth location of their mother and grandfather--and have not been to Switzerland.
