It's not really feasible for buildings of that size to have whole load standby generators. For a building the size of a hotel, you're talking about millions of dollars of up front equipment costs and tens to hundreds of thousands of dollars a year in maintenance just to run a few times a year for a few hours at a time. They'll definitely have some capacity, but usually not enough to run the whole building, HVAC equipment, etc.
Hospitals can't even afford to have whole load generation. They'll keep the OR lit up and air conditioned because of the sensitivity of the space, but most of the rest of the building load of a hospital isn't on the generator buss. The computer and server rooms and their AC systems will typically be on generator to keep them going. You'll have maybe one outlet a room that's on the generator buss that only things like respirators and life-critical equipment should be plugged into (look for the red outlet plates next time you're in a hospital) and you'll have some emergency lighting and MAYBE some amount of air conditioning for more sensitive areas, but that's about it.
