Really good. Love bbq ribs, just not something you can smoke quickly. 
Pork butt was in a 3 hour stall. Put it on at 7am and it’s just getting to IT temp 180.
Prob be done at 4:30, so almost 10 hours.
All worth it

They gave me pulled pork in some BBQ nachos week ago instead of brisket, I nearly died.
