Considering the potential of a doughnut when you factor in fillings, batter, and toppings, I don't know how anyone would routinely choose a beignet over a doughnut.

Don't get me wrong. Beignets are delicious, but all they bring to the table is fried dough and powdered sugar. There is so much untapped potential when you compare them with doughnuts.

I didn't have funnel cake for the first time until I was about 16 or 17 and I was very surprised by how much it resembled beignets in terms of flavor (especially if you get it without any kind of fruit topping).
