I'd like to do some "off the beaten path" type of stuff while I'm there. I'm sure tours are a safe bet, but does anyone have any experience venturing out on their own while down there?

Honestly it was my favorite trip I've been on. It was a college sponsored trip, we spent a week on a small boat motoring from island to island. Very stark volcanic scenery, fearless wildlife. Snorkeling with the seals was a blast and there were aquatic iguanas, flightless cormorants, and sea turtles in the water as well. You could walk up to 3 species of Booby, and Frigatebirds on their nests and it didn't bother them.

It's not something you can really do on your own. A guide has to be with you to make sure nobody does anything really stupid with the wildlife. And there is no where to stay on most islands so you need to do it on a boat with cabins. I can't recommend it highly enough, though.
