Might also consider resale value. Look at other houses in the area. If they all have central air and your house has mini splits, it could cause future buyers to balk. Not saying anything about mini splits, but resellability is something I consider when looking at houses.

Being it's me and the wife we close off two bedrooms and run one 8500 btu unit in the living room, and a 5k btu unit in the kitchen and bedroom and we stay cool for $200ish.

If you don't need to cool but a few rooms, window shakers are the best/most economical way to go. Watch the humidity in those closed off rooms though.
