What do the “GMs” do behind the scenes? They must have an actual job and not just what they do on TV. Do they help with booking?

They're agents. Pearce spent years with Arn booking the house shows. I believe Aldis is similar to Heyman in that he's a key on-camera guy but is treated as a resource for those needing help.

The role of “GM” is strictly kayfabe, but they do have regular jobs within WWE offscreen. Per wiki, Adam Pearce is a “Trainer, producer, and on-screen WWE authority figure” and Nick Aldis is actually a backstage producer.
