Seems like one of those things I should be able to find on the web, but I've failed.

Elephant Ears are mostly known as Taro, or Gabe in The Philippines, that might help.
They grow fast.
They grow fast.

I assume you are referring Colocasia.
Their growth rate is largely dependent on the species, but is also influenced by other factors including:
the richness of the soil,
the amount of water,
the temperature,
the amount of available space,
any competing plants in the vicinity,
etc.

They don't like the cold and it's been oddly cold so far this spring. They should grow pretty big in a month or so though

Good conditions will sprout like a weed

I have those pains in the arse all over my yard. Yeah they grow fast as hell, especially when it rains.

They will grow pretty quick. Ours were all but decimated by the winter, and have gone from one measely green sprig to 8 "ears" that are about 20" in diameter right now.

I mean the big ones that grow under trees in partial sun, not the small stuff that grows next to lakes and streams.
