I found the recipe in one of my grandmother's Southern Living cookbooks. You get a little tang, a little bit of savory.

Soak the butter beans over night.
Cook down bacon and shallots.
Add balsamic vinegar once they're cooked, let it simmer.
Boil the butter beans in saltwater and add the jous from the bacon.
Once the beans are close to cooked, toss in the bacon/shallot/balsamic mix.
