I've been to all three several times, with the most times at Big Bend. Big Bend has the least amount of light pollution of any other park ( LINK) and is absolutely incredible for looking for shooting stars.
Big Bend and Guadalupe both have great hikes. The South Rim Trail is awesome in Big Bend, and the Guadalupe Peak Trail is great in Guadalupe. Of course these are my favorites, but there are a slew of other great trails.

I love how BB takes steps to control the light pollution. My first go around there I was amazed at the shielded lights and wish our cities did that. I definitely want to go to Balanced Rock and cross over to Mexico this time. Part of me wants to swim across the Rio Grande if conditions allow.

If you are looking for a good alternative, I would suggest doing a BB and BB State Ranch. It has many of the geological features, but it's even more isolated. The drive down river road is some of the most scenic you'll see out in West Texas.
Also, Lajitas is a great tourist town in between the NP and State park.
