fight the urge to just open the drains and treat sewer like home. when you do that, solids stay in the tank and liquids run out. smells sorta like death taking a shite.
drain black water, then gray water to flush the line. then add a few gallons to the black water tank and top with some blue tank chemical.

I think the expensive ones have self-leveling. At work a few years ago, we got a 24ft flatbed gooseneck with 6 hydraulic jacks on it, and a self-leveling system. The system itself was an extra $5k, but that could have been because of the length of the trailer, or the fact that it was holding 20k pounds
It was nice. Just press a button and wait for it to level
When I first learned, the hardest part was the fact that it pivots over the rear axle, and you can basically turn the thing sideways without moving it forward or backwards. IMHO, you've got to swing the truck a lot more for a 5th wheen than a regular trailer when you're backing up. It is hard to keep it pointing exactly where you want it to go. I can back up a regular trailer just as easily as a truck without a trailer, but 5th wheels were a learning curve
