Not only the best Star Wars movie but one of the best movies ever made in my opinion. And yea when we see Vader's silhouette in the carbonite freezing chamber I still get goosebumps to this day. So many great things in Empire; the battle of Hoth, the asteroid field chase and Vader vs Luke. The music was awesome too.

Not ESB, but in Return, I shudder to think what the Jabba/Leia scenes would have been like if this was done on, say HBO, today.

For ESB, I'm sure they would have upped the torture stuff from merely being suggested/exposited (expositioned?) and the Han frozen in Carbonite part would have been a lot more gruesome.
And they would have had a lot of dicks and dudes buttfricking and shite.

"The force is with you young Skywalker."

"But you are not a Jedi yet."

The ending where Vader confirms the hyper drive has been disabled but R2D2 fixes it and you see the Falcon jump to hyperspace is one of the best scenes. Vader looks out the spaceship window, then turns around, then looks back into space and then walks back. Just the gesture says I am surrounded by idiots.
