The prequels are not good movies. Episode 3 is okay. I don't know how anyone can complain that TLJ doesn't "feel like a Star Wars movie" while trying to redeem the prequels (which feel so much more cartoon-y).
I find that in many ways, Episode III can be viewed as almost a standalone film where you get to see virtually everything that you were told in the old trilogy. Anakin shows off his starfighter pilot skills, you see a chummy relationship between Anakin/Obi-wan (not spoiled brat Anakin and teacher Obi-Wan), you understand why Anakin fell to the darkside (save his wife), and you witness the fall of the Jedi/rise of the Empire.
I think there were some poor storytelling decisions made on Lucas' part, but I actually find the ST much more egregious in this regard. I also feel like the prequels really helped to establish the Star Wars universe beyond being a trilogy of well received action-based science-fantasy films.
It's somewhat unfair to judge the sequel trilogy based only on the first two films, but thus far, Episodes 7 and 8 took away a whole lot but haven't really added much to the Star Wars universe.

Maybe so but I did not enjoy the execution. I always thought Anakin went from Jedi to killing children very quickly.

Obviously, this is all subjective but they've added characters I'm really interested in and I'm curious to see what happens next.

I love Rey. I think she's a fantastic character. But also Kylo, Poe, and Finn.

30 years later it's still Rebels vs Empire, X-wings, Tie Fighters, Star Destroyers, etc.
The era just isn't fleshed out well at all

That's fair. I still like those dynamics/things.
