They wanted him to land on the same kicking leg...they hired martial arts experts - were going to use a stunt double - but nobody could do it since it wasn't a real martial arts move. So they just said screw it and had him do it the only way humanly possible and then quickly switch to the good leg and hope nobody notices.

Today they would CGI his kick and land all on the same leg.

It's jsut a flying front snap kick froma crane stance. Nothing that a yellow belt couldn't pull off. As far as landing on the injured leg, so do gymnasts.

After taking Tae Kwon Do for so long, it is a little hard to take this movie seriously. Miyagi's moves are extremely slow and soft. It is really bad when he beats up Sato's gang in part 2 who clearly were experts.
