1. The teams keep them happy with huge contracts and guaranteed money. Many are way overpaid just to avoid holdout situations.
2. The few ones who are so good to have an argument they should be paid more are global celebrities with massive endorsement contracts. Why risk holding out for a few extra million for 5 years when it could destroy your reputation and hurt endorsements for decades. Manning and Brady will be selling shite on tv until they are 70. Why would they risk looking like anything but an unselfish champion with first class character? All of Favre's bullshite at the end of his career really hurts him now.

I agree with most of what you said, but Favre has been in like every Wrangler ad for the past three years.
