Baseball: Jake Peavy. I didn't play baseball in H.S. but I saw him pitch a few times, he was truly dominant.
Football: Antwan Odom. Played his team a few times, always commanded a double team but he would still manage to get 2-3 sacks a game, block FG's, and score an occasional TD on offense as a TE or WR. He played for Alabama in college and the Titans & Bengals in the NFL.
Also have to mention Brandon Johnson. He was a tailback in high school. He played on the same team as Odom, Alma Bryant. He was the most feared player on that team. He played tailback and free safety. Easily the strongest player we ever played. He played fullback for Auburn from 2000-2003. Had a brief stint with the Falcons but was cut.

great bump,
best ive ever seen: Peyton and Eli both played against the k-12 school I went to as a kid.
I'm sure there are countless others that i'm unaware of.
Best I've played against: Joe McKnight and JJ
