That one will be tough, Judge averages 8.8 WAR per 162, while Soto is at 6.1 WAR per 162. Soto has youth and longevity on his side which is a plus for him. So for counting stats I firmly believe he will be pass Judge by the time he retires in most stats.
Judge will probably finish his career around 80 WAR (56.3 in year 10) as he will pass 60 career this season. Soto has 37.9 in 8 years currently. Judge will finish with more MVP's and personal accolades than what Soto will.
So better career will depend on what you see as more valuable.
