Been a while since I built my house, but is the profit a fixed amount based on the estimate or going to be 10% of the actual cost? Also, is the same guy doing the onsite supervision the same guy getting the profit? Are the allowances in line with what you are wanting to build?

I'm not a fan of 10% deals that are prevleant among small contractors. What is his incentive to save you money? Because there is a nice incentive to have you spend more than necessary.
